We learn dozens of throwing techniques (nage waza) in Judo, but there are always those 10 to 20 we love best and use most. For self defense, practice at least one throw in each of the 6 primary directions (forward, backward, left, right, up, down) from the four primary levels (ankle, knee, hip, shoulder) until you can do them from any position without thinking.
